Microgreens 101

Everything you need to know about microgreens — what they are, how we grow them, and how to get the most out of your clamshell.

What Are Microgreens?

Microgreens are the young seedlings of vegetables and herbs, harvested just after their first true leaves appear — typically 7-14 days after sowing. They're older than sprouts but much younger than the mature vegetable, which is why they pack concentrated flavor and color into a tiny leaf.

Microgreens vs. Sprouts

Sprouts are grown in water alone and eaten whole, roots included, often within just a few days. Microgreens are grown in a hydroponic medium or soil, harvested by cutting the stem above the roots once true leaves develop, and have a firmer texture and more developed flavor than sprouts.

Why Hydroponically Grown?

We grow in a controlled hydroponic system instead of soil. That means no soil-borne pests, no inconsistency from batch to batch, and a cleaner final product — you're not rinsing dirt off your greens before you eat them.

How to Store Your Microgreens

Keep your clamshell refrigerated and unwashed until you're ready to use it — rinsing before storage introduces moisture that speeds up wilting. Stored this way, microgreens typically stay fresh for 5-7 days.

How to Use Microgreens

Microgreens are best added raw, right before serving, so they keep their texture and flavor. Try them on sandwiches and tacos, folded into eggs or omelettes, tossed into a salad, blended into a smoothie, or as a finishing garnish over soups and grain bowls.
